In-Person Workshops and Events
Métier workshops are held in the top-of-the-line teaching kitchen at the Relais de Camont, led by Nathan Gilmour and his team of experts. The workshops are designed as fully hands-on sessions, where everyone is invited to take up a knife as part of their learning. Additionally, workshops revolve around tasting the various products we're creating together to gain an ever deeper understanding of the animal, butchery, charcuterie, and preservation practices.
For 2024 we're offering two week-long complementary sessions, the first of which lays the groundwork for the charcuterie practice, the second endeavors to help deepen that established practice through more professionally-geared techniques and products. If you're a true beginner or amateur, we will recommend starting with the first week before embarking on the more 'pro' second week. If you're a more seasoned butcher or charcutier (and are short on time), the second week may be a better fit. We're of course happy to consult with you to help find the right solution for you and your group / family.
Note: both sessions work well standalone, however, we encourage learners to participate in both - we're also offering a considerable discount as part of the package.

The workshop participation fee includes a light breakfast and school lunch, many (many!) tastings, as well as all course materials, supplies, and locally sourced & properly slaughtered pork.
There are many affordable opportunities for accommodation in the area, particularly in the town of Nérac, and we will be happy to provide guidance as to where would be the best fit for you and / or your group or family. Also, we are able to advise you on your way to reach us here in Southwest France - best options are usually either to fly to Bordeaux or Toulouse, then rent a car for flexibility.
